Katie Lee Biegel knows how to get us into the fall spirit. From her broccoli-stuffed spaghetti squash to her slow-cooker lentil stew, the former co-host of the now-canceled Food Network show Kitchen is fond of her comforting dinner mains, and she shares a side dish that’s just as cozy and delicious for the season.
“I’m making melting potatoes,” Biegel said in an Instagram video. “I think they should be renamed ‘fancy potatoes that are actually so easy.'”
Here’s how to make Biegel’s highly rated melting potatoes—plus more recipes that embrace autumn’s fresh flavors.
Biegel starts by cutting her peeled potatoes into 1-inch slices before seasoning them with salt and pepper on both sides. Then, in an oven-safe pan over medium heat, she adds about 2 tablespoons of vegetable oil with a few pats of butter. Once hot, she moves each potato slice to the pan and lets them sizzle for a few minutes.
“It’s really important to get that great crust on your potato,” Biegel explained. “You don’t want to touch them, don’t move them around, just let them do their thing.”
She flips the potatoes to show the browned side. As the other side crisps up, Biegel pours chicken broth into the pan “in order to get them really soft and melty on the inside.” For more seasoning, she also throws in 2 cloves of garlic, more butter and fresh rosemary. Then, it’s time for the oven. Biegel puts the whole pan into a 400°F oven for 30 minutes.
“They’re going to come out perfectly cooked, nice and crispy brown on the outside and creamy on the inside,” Biegel raved. And once they’re out of the oven, they look exactly as described.
To finish it off, she tops the potatoes with flaky sea salt before plating. As she cuts into them with her fork, the soft center of the crispy potatoes is revealed.
“I love a recipe that looks really fancy that actually took very minimal effort,” Biegel said. “If you want to impress everyone, make these potatoes.” You don’t have to tell us twice!
Fans were raving about Biegel’s potatoes in the video’s comment section, with one commenter saying they have made them “dozens of times.”
This recipe reminds us of our own melting potatoes, which use very similar ingredients and techniques. You can dress up these melting potatoes by seasoning them with salt and vinegar, garlic and Parmesan or lemon and rosemary. It’s even easy to use this method on sweet potatoes—which can be a fresh take on your typical Thanksgiving side dish. Try them out for the holidays, and thank Biegel and us later!
