Cruising the Caribbean? There’s a New Floating Taco Bar You Can Swim Up To

When you think about Caribbean day trips, you probably picture beaches and rum punch. But this winter, St. Thomas in the U.S. Virgin Islands is getting something a little different: a floating taco restaurant and bar you can literally swim up to.

Lime Out, the wildly popular water-based restaurant that added a fun new draw to St. John, is opening its second location just in time for peak cruise season. It’s bigger, it’s fully solar-powered, and it’ll be serving hundreds of tacos an hour.

A Larger, Solar-Powered Lime Out Lands in St. Thomas

This new Lime Out spans 850 square feet, making it more than a quarter the size of the St. John location. It also runs fully on solar power, a setup the team says it’s been working toward for years.

It’s anchored in Lindbergh Bay, only a short ride from the island’s two major cruise piers—Havensight and Crown Bay—so it’s positioned to catch the flow of visitors arriving throughout the season.

To make the trip even easier, passengers will be able to hop on water shuttles like Taco Taxi, float out for tacos and a swim, and still make it back to their ship with time to spare.

What’s on the Menu

The St. Thomas menu keeps the heart of what made Lime Out a destination on St. John. You’ll still see favorites like the surf & turf, rum-rib pulled pork, and ceviche tacos, all created by chef Amaro Rivera, who’s leading the kitchen at both locations.

But St. Thomas is also getting its own exclusives—including the “Bless Up” taco, a jerk-spiced grilled chicken taco finished with pickled cabbage and a pineapple–mango-lime relish that feels right for this part of the Caribbean.

Cocktails are part of the draw, too. Drinks like “The Danger” and “Nene’s Margarita” are back, served in reusable cups to cut down on waste and keep the bay clean.

All food prep is done in a land-based kitchen to avoid any impact on the water, and Lime Out uses biodegradable materials throughout the operation. The team also plans to partner with local non-profits and help organize coastal cleanups as the season ramps up.

Mark Your Calendar

Lime Out St. Thomas officially opens to the public on Nov. 23, initially running Sunday through Friday from 10:30 a.m. to 4:30 p.m., with daily service expected in January.

For cruise visitors, the pitch is simple: an easy, low-effort detour where you can swim, snack, and sip something cold without straying far from the port. It’s the kind of stop that turns a packed port day into something a little more memorable.
